- 12 onion, chopped fine
- 1 medium tomatoes, chopped
- 2 cups parboiled rice
- 4 cups water
- 12 teaspoon curry powder
- 12 teaspoon cayenne pepper
- salt
- 2 tablespoons oil (for frying)
Directions

1Heat oil and saute onions.

2When brown add tomatoes.

3Cook 3 minutes and add spices.

4Add rice and stir.

5Cook 3 minutes, stirring occasionally.

6Add water and bring close to a boil.

7Cover and lower heat to about half way (medium).

8Cook till water disappears and holes form in the rice.
