Tomato Rice Pilaf

Ingredients

  • 3 oz. butter
  • 1 lb. rice
  • 1 tsp. salt
  • 1 oz. onions, chopped
  • 1 qt. chicken stock (hot)

Directions

    Melt butter in saucepan.

    Add onions; saute until transparent. Add rice; saute about 5 minutes, stirring often.

    Add hot chicken stock, tomatoes and salt.

    Cover tightly; bake at 350° for 18 to 20 minutes, or until all liquid is absorbed and rice is dry and fluffy.

    (May be served in scooped out tomatoes.)
