Tomato Rice Pilaf

- 3 oz. butter
- 1 lb. rice
- 1 tsp. salt
- 1 oz. onions, chopped
- 1 qt. chicken stock (hot)
Directions

1Melt butter in saucepan.

2Add onions; saute until transparent. Add rice; saute about 5 minutes, stirring often.

3Add hot chicken stock, tomatoes and salt.

4Cover tightly; bake at 350° for 18 to 20 minutes, or until all liquid is absorbed and rice is dry and fluffy.

5(May be served in scooped out tomatoes.)
