  • 300 g ground chicken
  • 14 cup flat leaf parsley, chopped
  • 2 eggs
  • 14 cup plain flour
  • 125 g mozzarella cheese, cut into 16 pieces
  • 4 sheets puff pastry, thawed

Directions

    Preheat oven to 220C Line a large baking tray with baking paper.

    Combine chicken, parsley, 1 egg, and flour in a large bowl; season with salt and pepper.

    Divide the chicken mixture into 16 portions.

    Shape each portion of mince around a piece of cheese.

    Roll to enclose cheese.

    Cut pastry sheets into quarters (squares).

    Place 1 portion of mince on centre of each square, gather pastry over chicken to form a bag.

    Beat remaining egg; brush over pastry.

    Place bags on prepared tray.

    Bake for 15-20 minutes or until golden brown and cooked.
