Tuna Chowder

Ingredients

  • 2 Tbsp. butter
  • 1/2 c. chopped celery or green pepper
  • 1 medium onion, chopped
  • 1 medium potato, chopped fine
  • 3 Tbsp. flour
  • 3 c. milk
  • 2 (6 1/2 oz.) cans tuna in water
  • 4 oz. Cheddar or Jack cheese
  • 1/2 tsp. thyme
  • 1/2 tsp. dill
  • salt and pepper
  • 1/4 c. chopped parsley (optional)

Directions

    In a heavy bottomed soup pot, melt the butter and saute the celery, onion and potato for 5 minutes or until potato is soft, stirring constantly.

    Sprinkle in the flour and mix thoroughly. Add the milk slowly, stirring.

    Continue to stir until mixture thickens.

    Stir in tuna, cheese, thyme, dill and salt and pepper to taste.

    Pour into soup bowls garnished with the parsley.

    Serves 4.
