- 1- 1/4 pound Ground Turkey
- 15 ounces, weight Canned Fat Free Re-fried Beans
- 4 ounces, weight Canned Diced Chiles, Drained
- 1- 1/2 ounce, weight Packet Taco Seasoning
- 2 cups Shredded Cheddar Cheese, Divided
- 15 ounces, weight Canned Enchilada Sauce
- 8 whole Flour Tortillas
Directions

1In a large skillet, brown the ground turkey until cooked through.

2Drain any excess grease, if necessary.

3In a large bowl combine the cooked turkey, refried beans, chiles, taco seasoning, and 1/2 cup of the shredded cheese.

4Stir until evenly combined.

5Preheat the oven to 350 degrees F. Grease a 9x13 dish with cooking spray.

6Pour the enchilada sauce in a shallow pan or the same skillet you used to brown the turkey.

7Coat both sides of a tortilla with the sauce, place on a plate and put about 3/4 cup of the mixture in the middle of the tortilla.

8Roll up the tortilla and place it seam side down in the 9x13 dish.

9Repeat with remaining tortillas and turkey mixture.

10Pour the remainder of the enchilada sauce over the pan and top with the remaining 1 1/2 cups cheese.

11Cover the pan with foil and bake at 350 degrees F for 40-50 minutes, or until the center is hot and the cheese is bubbly.

12Remove the foil for the last few minutes to brown the top.
