  • 1 lb. low-fat Ricotta cheese
  • 4 oz. Mozzarella cheese
  • 2 small broccoli stalks with florets, cooked for 5 minutes in boiling water, drained and chopped (2 c.)
  • 1 c. finely chopped mushrooms
  • 2 scallions, finely chopped
  • 1/4 c. fresh or 2 tsp. dried basil
  • 1 1/2 tsp. oregano
  • 1/4 c. finely chopped parsley
  • freshly ground pepper
  • homemade or 8 oz. jar spaghetti sauce
