  • 1 tablespoon olive oil
  • 12 cup onion, chopped
  • 1 -2 garlic clove, minced
  • 1 cup carrot, chopped
  • 14 teaspoon pepper
  • salt, to taste
  • 1 cup long-grain rice
  • 2 cups vegetable stock
  • 1 sweet red pepper, chopped
  • 2 green onions, thinly sliced

Directions

    Heat oil over medium heat; Saute onion, garlic and carrots, until softened.

    Season with salt and pepper.

    Add rice; cook, stirring, for 1 minute.

    Add in stock and red pepper; bring to boil.

    Reduce heat to low; cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.

    Remove from heat.

    Stir in green onions; cover and let sit for 5 minutes.
