  • 5 lb. venison hamburg
  • 4 Tbsp. Tender Quick
  • 2 1/2 tsp. mustard seed
  • 1 1/2 tsp. hickory smoke salt
  • 2 1/2 tsp. black pepper
  • 2 tsp. garlic powder

    Mix well.

    Make 5 rolls and wrap in Saran Wrap.

    Put rolls in refrigerator for 3 days.

    Take out once each day and roll while still in Saran Wrap to make firm.

    After 3rd day, unwrap and bake for 1 hour at 350°.
