- 2 c. quick-cooking rolled oats (uncooked)
- 2 Tbsp. granulated sugar replacement
- 1/4 tsp. salt
- 2 tsp. vanilla extract
- 1/2 c. liquid shortening
- 1 egg, well beaten
- 1/2 c. walnuts, very finely chopped
Directions

1Combine oats, sugar replacement, salt, vanilla and liquid shortening in medium bowl.

2Stir to mix well.

3Cover and refrigerate overnight.

4Add beaten egg and chopped walnuts and stir to blend thoroughly.

5Pack onto greased cookie sheet by small amount of cookie mixture (level teaspoonful).

6Bake at 350° for 15 minutes.
