Warm Roasted Garlic Dressing

Ingredients
- 2 heads garlic
- 14 cup sherry wine vinegar
- 1 sprig fresh rosemary
- 12 cup olive oil
- coarse salt
- ground pepper
Directions

1Preheat oven to 400 degrees.

2Wrap garlic in aluminum foil.

3Place garlic on rack in oven, and roast until very tender, about 1 hour.

4Remove from oven, and let cool in foil.

5Cut off tops of garlic heads with a serrated knife.

6Squeeze garlic pulp into a small saucepan.

7Place over medium-low heat, and whisk in vinegar.

8Rewhick, if necessary before serving.

9Finely chop rosemary, and add to saucepan.

10Slowly whisk in olive oil, salt, and pepper, and turn off heat; keep dressing warm until ready to use.
