  • 9 oz sugar
  • 3.5 oz water
  • 18 oz white chocolate finely grated
  • 1 Qt heavy cream

    Beat egg whites to soft peaks

    At the same time cook sugar+water to 121C or 248F

    Add sugar to beaten egg whites and mix until cool

    Whip cream

    At slow speed mix chocolates into meringue and then fold in cream
