- 1 c. raw wild rice (4 c. cooked)
- 1/2 c. olive oil
- 1/2 c. raisins
- 1/2 c. parsley, chopped
- 1/2 c. green onion, chopped
- 2 Tbsp. fresh mint
- 1 tomato, peeled and chopped
- 3 Tbsp. wine vinegar
- 1 tsp. salt
- 1/2 tsp. freshly ground pepper
Directions

1Cook rice and toss with olive oil and raisins.

2Season with 1 teaspoon salt and 1/2 teaspoon pepper.

3Let cool to room temperature.

4Add parsley, onion, tomato and mint.

5Add vinegar and toss.
