Wild Rice Soup

Ingredients
- 1/3 c. uncooked wild rice
- 1 Tbsp. vegetable oil
- 1 qt. water
- 1 medium onion, chopped
- 1 celery stalk, chopped
- 1 carrot, chopped
- 1/2 c. butter or oleo
- 1/2 c. flour
- 3 c. chicken broth
- 2 c. light cream
- 1/2 tsp. rosemary
- 1 tsp. salt
Directions

1Rinse rice.

2Drain.

3In medium pan combine rice, oil and water. Bring to a boil.

4Reduce heat.

5Cover and simmer for 30 minutes. Meanwhile, in a larger pot, cook onion, celery and carrots in butter until veggies are almost tender.

6Blend in flour; cook and stir for 2 minutes.

7Add broth and undrained rice.

8Bring to a boil, cook and stir until slightly thickened.

9Stir in cream, rosemary and salt.

10Reduce heat and simmer for about 20 minutes or so.
