Ingredients
- 12 cups mashed and strained steamed zucchini (you can also use other types of summer squash like crookneck, pattypan, etc)
- 1 cup molasses
- 4 teaspoons ground nutmeg
- 3 cups granulated sugar
- 1 tablespoon salt
- 2 teaspoons ground cloves
- 2 12 tablespoons ground cinnamon
- 12 cup vegetable oil
- 12 cup molasses
- 2 eggs, beaten
- 1 teaspoon vanilla extract

- 2 12 cups all-purpose flour
- 1 cup raisins
- 1 cup evaporated milk

1For the ZB Base: Prepare hot, sterilized jars for canning: either 6 pints or 3 quarts.

2Set aside.

3Over medium heat in a large pot combine all ingredients.

4Bring to a bubbling boil, stirring occasionally, and skim off foam.

5Continue to cook, stirring occasionally, for 20 minutes more.

6Pour immediately into prepared hot sterile jars and seal.

9FOR CAKE: Prepare the ZB Base.

10For the cake, you will be using 1 cup of the ZB.

11Preheat oven to 350 degrees F. Spray or grease a loaf pan.

12In a mixing bowl, combine ZB, oil, molasses, eggs, and vanilla and mix thoroughly.

13In a separate bowl, combine the salt, baking soda, baking powder, and flour.

14Add the combined dry ingredients to the ZB bowl and mix well, then stir in raisins.

15Pour batter into the prepared loaf pan and bake at 350 degrees F for 50 to 55 minutes or until a knife inserted into the middle comes out clean.

19FOR PIE: Prepare the ZB Base.

20For the pie, you will be using 2 cups of the ZB.

21Preheat oven to 375 degrees F. Combine the ZB and remaining pie ingredients, then pour into the uncooked pie shell.

22Bake in the preheated 375 degree F oven for about 45 minutes, or until the pie is firm and lightly browned.

25For the cookies, you will be using 1 cup of the ZB.

26Preheat oven to 350 degrees F. Spray your cookie sheets with pan spray.

27In a mixing bowl, cream together the sugar and butter or margarine.

28Add the ZB and beaten egg and mix.

29In a separate bowl, combine the salt, baking soda, and flour.

30Add the combined dry ingredients to the creamed mixture/ZB and mix well to complete the cookie dough.

31Add the vanilla and mix again.

32Flour a flat surface and roll out the dough to 1/4-inch thick.

33Using a cookie cutter, cut into cookie shapes then place onto pre-sprayed cookie sheets.

35Bake cookies in preheated 350 degree F oven for 10 to 12 minutes.
