- 3 eggs
- 2 c. sugar
- 2 c. shredded zucchini (3 to 4 large)
- 1 c. canola cooking oil
- 2 tsp. vanilla
- 3 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. cloves
- 1/2 c. chopped walnuts
Directions

1Makes 2 (9 x 5-inch) loaves.

2Grease 2 loaf pans.

3In a large bowl, beat eggs until foamy.

4Stir in sugar, zucchini, oil and vanilla.

5Add dry ingredients (already mixed in small bowl).

6Pour into pans.

7Bake 50 to 60 minutes at 325°.

8Test with toothpick. Cool in pan 10 minutes.

9Turn out to cool completely.
