  • 1/4 c. butter or margarine
  • 1 1/2 c. zucchini, peeled and sliced
  • 1 1/2 c. chopped broccoli
  • 1 egg
  • 1/8 tsp. pepper
  • 1/4 c. milk
  • 1 tsp. salt
  • 1/2 to 1 c. shredded Swiss cheese
  • 1/4 c. Parmesan cheese

    Melt butter in large skillet.

    Add vegetables; cook until tender.

    Beat egg slightly; stir in Swiss cheese, milk, salt and pepper.

    Place vegetables in a 1-quart casserole dish.

    Pour egg mixture over vegetables.

    Sprinkle with Parmesan cheese.
