- 1 Tbsp. margarine
- 2 Tbsp. finely chopped onion
- 1 3/4 c. chicken broth
- 1 clove garlic, crushed
- 1 lb. zucchini, cleaned and sliced thin
- 2 Tbsp. water
- 1/2 tsp. curry powder
- 1/2 tsp. salt
- 1/2 c. skim milk
Directions

1Heat margarine in deep skillet. Add onion, garlic and remainder of zucchini and water.

2Cover and simmer gently 10 minutes.

3Stir with wooden spoon while cooking. Remove from heat; add all remaining ingredients. Mix well.

4Turn into blender for 30 seconds.

5Serve hot or chilled.
