- 2 each apples peeled, cored, thinly sliced
- 8 tablespoons butter
- 8 large eggs
- 8 teaspoons cream
- 1 x salt and black pepper to taste
- 2 tablespoons butter
- 8 tablespoons brie cheese diced
Directions

1Saute apple in butter.

2Beat together eggs, cream, and salt & pepper until blended but not frothy.

3Melt butter in omelette pan over high heat until foam begins to recede but before beginning to color.

4Pour in egg mixture and prepare omelette, beating to lighten but still allowing it to set on the bottom.

5Fill with sauteed apples and diced Brie cheese cubes.

6Fold or roll and slide out of pan onto a heated plate.
