- 3 tablespoons butter
- 3 granny smith apples peeled, cored, finely chopped
- 2 tablespoons maple syrup
- 1 tablespoon sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup golden raisins
- 1 ounce flaked almonds toasted
- 2 sheets puff pastry thawed if frozen
- 1 large egg lightly beaten
- powdered sugar for dusting
- ice cream to serve
Directions

1Melt butter in a large frying pan on medium. Cook apple, stirring occasionally, for 4-5 mins until golden. Stir in maple syrup, sugar and cinnamon and cook, stirring, for 4-5 mins until liquid boils and thickens. Transfer mixture to a bowl and stir in raisins and almonds. Set aside for 15 mins to cool, then chill until mixture is cold.

2Preheat oven to 400°F. Cut each pastry sheet into 4 even squares. Spoon 2 tbsp apple mixture on to one half of each pastry square. Brush edges with egg. Fold pastry over filling to form a triangle, pressing edges to seal. Brush with remaining egg.

3Bake for 15-20 mins, until golden. Dust with powdered sugar and serve with ice cream.
