- 1 (6 oz.) box long grain wild rice
- 1/2 c. boiling water
- 3/4 c. dried apricots, chopped
- 2 green onions, finely chopped
- 1/2 c. fresh mushrooms, chopped
- 1/4 c. green peppers, chopped
- 2 Tbsp. butter
- 3 Tbsp. pecans, chopped
- 1 Tbsp. parsley, chopped
- 1/8 tsp. pepper
- dash of red pepper
Directions

1Cook rice according to directions on box.

2Pour boiling water over apricots and let stand 20 minutes to soften.

3Drain.

4Saute onions, mushrooms and green peppers in butter until tender.

5Add to the cooked rice, then add apricots, pecans, parsley and seasonings.

6Mix well.
