  • 1 (6 oz.) box long grain wild rice
  • 1/2 c. boiling water
  • 3/4 c. dried apricots, chopped
  • 2 green onions, finely chopped
  • 1/2 c. fresh mushrooms, chopped
  • 1/4 c. green peppers, chopped
  • 2 Tbsp. butter
  • 3 Tbsp. pecans, chopped
  • 1 Tbsp. parsley, chopped
  • 1/8 tsp. pepper
  • dash of red pepper

Directions

    Cook rice according to directions on box.

    Pour boiling water over apricots and let stand 20 minutes to soften.

    Drain.

    Saute onions, mushrooms and green peppers in butter until tender.

    Add to the cooked rice, then add apricots, pecans, parsley and seasonings.

    Mix well.
