  • 2 jars marinated artichoke
  • hearts
  • 1 small onion minced
  • 1 clove garlic minced
  • 4 eggs
  • 8 oz.sharp cheddar cheese
  • grated
  • 1/4 C bread crumbs
  • 1/4 tsp (or more) oregano
  • 1/8 tsp ea. tabasco and pepper
  • 2 Tbs chopped parsley

Directions

    Drain oil from one jar artichoke hearts into frying pan. Saute onion and garlic until soft. Drain other jar of hearts, and discard oil. Chop artlichokes. Beat eggs in a bowl and add all other ingredients. Bake in quiche or similar pan for about 30 minutes at 325 degrees.
