- 2 mackerel (about 2 lb each)
- 1 large onion, finely chopped
- 1 carrot, diced fine
- 1/2 green pepper, chopped
- 1 bay leaf
- 3/4 cup vinegar
- 1/2 teaspoon salt
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon fresh thyme, minced
Directions

1Preheat oven to 400 degrees.

2In a saucepan over low heat combine all ingredients except for the fish.

3Cook over low heat for about 20 minutes.

4Remove the bay leaf.

5Place fish in a baking dish and pour the sauce over the fish.

6Bake for 30-40 minutes.
