- 1 lb. dry beans
- 2 grated carrots
- 1 grated medium onion
- 2 stalks celery, diced
- 2 small bay leaves
- 1 ham bone or ham slice (no salt)
Directions

1Pick over beans, discarding bad ones.

2Rinse well. Place ingredients in Dutch oven.

3Cover with 2 quarts water.

4Bring to boil, reduce heat.

5Cover.

6Simmer 2 1/2 to 3 hours or until tender.

7More water may be needed.

8Remove meat from bone; discard bone and bay leaves.

9Season with salt and pepper to taste.

10(If salt is added to beans during cooking, beans will not cook to desired consistency.)

11Freezes very well.
