  • 1-3/4 cup Flour
  • 2 cups Sugar
  • 3/4 cups Cocoa Powder
  • 2 teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 Eggs
  • 1 cup Brewed Dark Coffee, Cooled
  • 1/2 cups Vegetable Oil
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Buttermilk

Directions

    Preheat oven to 350 F. Using a stand mixer stir together flour, sugar, cocoa powder, baking soda, baking powder and salt until well incorporated. Mix in eggs, coffee, oil, vanilla and buttermilk and beat for 1 minute. Batter will be thin.

    Pour into 12 paper lined jumbo cupcake cups. Fill each about 2/3 full. Bake for 18-22 minutes until a toothpick inserted in the middle comes out clean.

    1. For a sheet Cake: Pour batter into a greased 9x13 pan and bake 35-40 minutes.

    2. For a layer cake: Pour batter into two greased 9 inch round cake pans and bake for 30-35 minutes.
