- 1/2 c. oleo, melted
- 1/3 c. chopped onion
- 1 tsp. salt
- 3/4 c. cottage cheese
- 1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
- 4 eggs, slightly beaten
- 1 (8 1/2 oz.) pkg. quick corn bread mix (Jiffy)
Directions

1In mixing bowl, combine melted oleo, onion, salt, cheese, broccoli and beaten eggs; blend.

2Stir in muffin mix.

3Pour into a 13 x 9 x 2-inch baking pan.

4Bake at 400° for 20 to 25 minutes. Cut into serving size squares.

5Yields 18 servings.
