Butternut Squash Pudding

  • 1 medium butternut squash (1 1/2 c.), boiled or steamed, then mashed
  • 1/3 c. butter or margarine
  • 1/2 c. brown sugar
  • 2 eggs, beaten
  • 1/2 c. milk
  • 1/4 tsp. salt
  • 1/4 tsp. maple flavoring

Directions

    While squash is hot add butter and mix, then add remaining ingredients and mix well.

    Pour into a greased baking dish and bake at 350° for about 30 minutes, until almost set in center.
