  • 3 c. flour
  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 4 eggs, beaten
  • 1 c. Wesson oil
  • 2 c. shredded carrots, packed
  • 1/2 c. chopped nuts
  • 2 tsp. vanilla

Directions

    Sift dry ingredients into large bowl twice.

    Make a hole in center and add beaten eggs and oil.

    Mix together well.

    Batter will be thick.

    Then add carrots; mix again well.

    Last, add nuts and vanilla.

    Bake in floured tube pan 1 hour at 325°.

    Frost with Cream Nut Frosting.
