- 3/4 c. quick cooking oats
- 1 c. low-fat buttermilk
- 1 1/4 c. unbleached flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 3 Tbsp. honey
- 1/2 c. carrots, shredded
- 1 tsp. orange rind, grated
Directions

1Combine oats and buttermilk in a mixing bowl and let stand 15 minutes.

2Beat egg with honey.

3Meanwhile, combine flour, baking powder and salt.

4Stir with egg into the oat mixture.

5Fold in carrots and orange rind, stirring only enough to moisten all ingredients.

6Spoon into muffin cups sprayed with low-fat cooking spray.

7Bake at 400° for 20 to 25 minutes.
