Cauliflower Soup

Ingredients

  • 1 medium head cauliflower
  • 1/4 c. chopped onions
  • 4 Tbsp. margarine
  • 1/4 to 1/3 c. flour
  • 3 c. chicken broth
  • 2 c. homogenized milk
  • 1 tsp. Worcestershire sauce
  • 1 c. sharp Cheddar cheese (about 4 oz.)
  • parsley

Directions

    Cook cauliflower in water until barely tender.

    Drain and chop coarsely.
  3. 3
    Saute onions in margarine until tender.

    Add flour, chicken broth and Worcestershire sauce and cook until thickened. Add milk and let come to a boil.

    Add parsley and cheese.

    Ready to serve when cheese has melted.

    Add chopped cauliflower before adding cheese.
