  • 2 whole chicken breasts, skinned, boned and halved
  • 4 pieces Monterey Jack cheese (1/4-inch thick and 1 1/2 x 3-inches long)
  • 4 sprigs fresh sage or 1/2 tsp. dried
  • 2 eggs
  • 1 tsp. grated Parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. minced parsley
  • flour
  • 1/4 c. clarified butter or oil
  • parsley (garnish)
  • lemon wedge (garnish)

Directions

    Cut pocket in each chicken breast (do not cut through).

    Place strip of cheese and a sprig of sage in each pocket.
