  • 2 chicken breasts, skinned and boned (4 pieces)
  • 1 or 2 eggs, beaten
  • flour
  • salt and pepper
  • 3 Tbsp. butter
  • 2 Tbsp. olive oil
  • 4 slices ham
  • 4 slices Mozzarella cheese
  • 1 bunch broccoli or 1 pkg. frozen
  • 1 chicken bouillon cube
  • 1/3 c. melted butter
  • grated Parmesan cheese

Directions

    Pound chicken breasts between wax paper.

    Dip in beaten egg, then flour, salt and pepper.

    Mix together.

    Saute in butter and olive oil until tender, 15 minutes.

    Cook broccoli until tender and drain.

    Arrange broccoli in 9 x 12 baking dish.

    Pour 1/2 cup butter over broccoli, then grated Parmesan cheese.

    Place chicken on top of broccoli, then ham and Mozzarella cheese.

    Pour over bouillon cube, mixed with 1/2 cup of water.

    Cover and bake at 375° for 15 to 20 minutes.
