Chicken Marsala

Ingredients

  • 2 whole chicken breasts, skinned, boned and halved lengthwise
  • 1/2 c. flour
  • 2 Tbsp. butter
  • 2 Tbsp. olive or vegetable oil
  • 2 c. sliced fresh mushrooms
  • 3/4 c. beef broth
  • 1/4 c. Marsala or other dry red wine
  • salt and pepper to taste

    Place each breast half between two pieces of heavy-duty plastic wrap or waxed paper and set on a sturdy surface.

    With flat side of meat mallet, pound to 1/4-inch thickness.

    Remove plastic or waxed paper; dredge each piece slightly in flour.

    In skillet, melt butter and oil.

    Saute mushrooms over medium heat until tender.

    With slotted spoon, remove from skillet.
