- 2 whole chicken breasts, skinned, boned and halved lengthwise
- 1/2 c. flour
- 2 Tbsp. butter
- 2 Tbsp. olive or vegetable oil
- 2 c. sliced fresh mushrooms
- 3/4 c. beef broth
- 1/4 c. Marsala or other dry red wine
- salt and pepper to taste
Directions

1Place each breast half between two pieces of heavy-duty plastic wrap or waxed paper and set on a sturdy surface.

2With flat side of meat mallet, pound to 1/4-inch thickness.

3Remove plastic or waxed paper; dredge each piece slightly in flour.

4In skillet, melt butter and oil.

5Saute mushrooms over medium heat until tender.

6With slotted spoon, remove from skillet.
