Chicken Provencale

Ingredients

  • 2 whole chicken breasts, skinned, deboned, cut into 4 pieces
  • salt and pepper
  • 1/3 c. flour
  • 1/4 c. olive oil
  • 1 minced garlic clove
  • 1 1/2 tsp. crushed oregano
  • 1 (14 oz.) can tomato wedges
  • 1 c. dry white wine
  • 1 c. fresh sliced mushrooms

Directions

    Salt and pepper chicken breasts and dip in flour.

    Saute in olive oil until browned.

    Add tomatoes, garlic, oregano and wine. Cook covered over medium heat for 25 minutes.

    Add mushrooms. Cook for 15 minutes more.

    Serve over white rice or pasta.
