Ingredients
- 1/2 yellow onion, chopped
- 1 clove garlic, finely chopped
- 1 cup chopped cooked potatoes, about one small potato
- 1/4 cup chorizo, cubed small
- 1 tbsp fresh rosemary, chopped
- 1/8 tsp smoked paprika
- 2 eggs, whipped up lightly with a fork
Directions

1Heat a non stick pan on a medium low heat.

2Add the chorizo, and sizzle it until the orange oils of the chorizo starts coating the pan

3Add the onion and cook for two minutes, then add the garlic and saute for more minutes

4Add the potato, rosemary and smoked paprika.

5Season with salt and black pepper.

6When everything is heated through, move everything around the edges of the pan, leaving a circle in the middle.

7Add the egg, turn up the heat a little and start moving the egg around with a wooden spoon.

8Don't worry if bits of the chirizo mixture get mixed in with the egg, that's fine.

9Spoon onto a plate and serve hot!
