  • 4 lbs catfish, whole, skinned
  • 1 orange
  • 1 lime
  • 1 tablespoon basil, fresh, chopped
  • 1 teaspoon mint leaf, fresh, chopped
  • 12 tablespoon extra virgin olive oil

    Slice orange and lime thin.

    In belly cavity overlap and alternate orange and lime slices.

    Rub fish lightly with olive oil.

    Sprinkle basil and mint over both sides of catfish.

    Overlap and alternate orange and lime slices on top of catfish.

    Bake at 325 degrees F until meat flakes with fork.
