- 3/4 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. scalded milk
- 3 eggs
- 2 Tbsp. butter
- 1 tsp. vanilla
- 1 (4 oz.) can coconut
- 1 (9-inch) baked pie shell
- 1/2 tsp. cream of tartar
- 6 Tbsp. sugar
Directions

1Combine 3/4 cup sugar, cornstarch and salt.

2Add milk gradually.

3Cook and stir until mixture thickens (3 to 5 minutes). Add small amount of hot mixture to egg yolks.

4Stir well and add to hot mixture.

5Cook 2 minutes, stirring constantly.

6Remove from heat.

7Add butter, vanilla and 1/2 can coconut.

8Pour in pie shell. Top with meringue made of egg whites, cream of tartar and 6 tablespoons sugar.

9Bake at 350° until meringue browns.
