Easy Tuna Quiche

  • 1 baked 9-inch pie shell
  • 1 (6 1/2 oz.) can tuna, drained
  • 1 1/2 c. grated Cheddar cheese
  • 1 c. evaporated milk
  • 1/2 c. chopped onion
  • 2 eggs, beaten
  • 1 Tbsp. lemon juice
  • 1 tsp. chives
  • 3/4 tsp. garlic salt
  • 1/8 tsp. pepper
  • 1/8 lb. sliced mushrooms (fresh is best)

Directions

    Preheat oven to 450°.

    Spread tuna over bottom of pie shell. Sprinkle cheese and onion over tuna.

    Top with sliced mushrooms. Beat together eggs, milk, lemon juice and seasonings; pour over tuna mixture.

    Bake on a cookie sheet for 15 minutes.

    Reduce heat to 350°; bake an additional 12 to 15 minutes or until center is set.

    Crab or shrimp may be substituted for tuna.
