Easy Tuna Quiche

Ingredients
- 1 baked 9-inch pie shell
- 1 (6 1/2 oz.) can tuna, drained
- 1 1/2 c. grated Cheddar cheese
- 1 c. evaporated milk
- 1/2 c. chopped onion
- 2 eggs, beaten
- 1 Tbsp. lemon juice
- 1 tsp. chives
- 3/4 tsp. garlic salt
- 1/8 tsp. pepper
- 1/8 lb. sliced mushrooms (fresh is best)
Directions

1Preheat oven to 450°.

2Spread tuna over bottom of pie shell. Sprinkle cheese and onion over tuna.

3Top with sliced mushrooms. Beat together eggs, milk, lemon juice and seasonings; pour over tuna mixture.

4Bake on a cookie sheet for 15 minutes.

5Reduce heat to 350°; bake an additional 12 to 15 minutes or until center is set.

6Crab or shrimp may be substituted for tuna.

7Serves 6.
