- 1 eggplant
- cracker crumbs
- oil
- Ragu sauce
- Mozzarella or Provolone cheese
- eggplant, cleaned and dried, cut in 1/2-inch slices
Directions

1Rub slices with oil and dip each slice in cracker crumb mixture or flour cornmeal mixture with garlic powder added and/or desired seasonings.

2Place in oiled 9 x 13-inch pan.

3Put on each slice approximately 2 tablespoons or more of Ragu slice covering top well.

4Bake at 350° for 20 minutes.

5Remove from oven and cover tops with Mozzarella or Provolone cheese.

6Bake 20 minutes more or until tender and brown.

7Serve hot.
