- 2 eggs
- 3/4 tsp. Italian seasoning
- 1 tsp. Parmesan cheese
- 2 slices bread (wet)
- salt to taste
- 1/4 tsp. pepper
- Italian bread crumbs
Directions

1Mix elk meat, eggs, Italian seasoning, cheese, bread (wring out excess water), salt and pepper in medium bowl.

2Add enough bread crumbs to make mixture stay together.

3Form into small meatballs and slowly fry until browned.

4Makes approximately 30 small meatballs.
