  • 1 c. New Orleans molasses
  • 1 c. shortening
  • 2 eggs, well beaten
  • 1 Tbsp. ginger
  • 1 tsp. cloves
  • 1 Tbsp. soda, dissolved in vinegar
  • 5 c. flour
  • 1 level tsp. salt
  • 1 tsp. cinnamon

    Cream shortening and sugar.

    Add eggs, molasses, soda and vinegar.

    Add sifted flour, salt and spices.

    Roll thin on a pastry cloth.

    Bake in moderate oven at 375°.

    Watch carefully, as ginger cookies burn easily.
