- 1 pkg. skinless chicken thighs
- salt to taste
- ground pepper to taste
- 1 1/2 Tbsp. olive oil
- 1 (6 oz.) jar marinated artichoke hearts
- 1 lemon, thinly sliced
- 1 Tbsp. minced fresh parsley
Directions

1Trim off and discard visible fat from chicken.

2Pat chicken dry with paper towels and sprinkle with salt and pepper.

3In a large nonstick skillet, over medium-high heat, heat the oil.

4Add thighs and cook 3 to 4 minutes on each side, until lightly browned.

5Pour artichoke hearts and their marinade over chicken. Lay lemon slices on top.

6Reduce heat to medium-low, cover and simmer 20 to 30 minutes, until chicken is cooked through.
