  • 1 12 cups sugar
  • 3 eggs, slightly beaten
  • 1 cup vegetable oil
  • 3 cups flour
  • 1 teaspoon salt
  • 12 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon
  • 12 teaspoon nutmeg
  • 12 teaspoon clove
  • 2 cups green tomatoes, grated and drained
  • 1 teaspoon vanilla

Directions

    Mix together first three ingredients.

    Sift together next 7 dry ingredients and add to first mixture.

    Grate or chop in a food processor enough green tomatoes to measure 2 cups, being sure to drain off the liquid before measuring.

    Add 2 cups green tomatoes and 1 teaspoon of vanilla to the batter and mix well.

    Pour into 2 greased loaf pans and bake at 350 for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
