- 3 c. finely sliced, peeled and cooked white potatoes
- 3 Tbsp. flour
- 1 Tbsp. minced onion
- 1/4 c. plus milk or light cream
- 1 tsp. salt
- 1/8 tsp. pepper
- 3 Tbsp. butter
Directions

1Have potatoes chilled.

2Then, in a bowl, combine the potatoes with all the rest of the ingredients, except butter.

3Heat 3 tablespoons butter in a heavy skillet, then add the potato mixture.

4Form into a large, round cake with a spatula and brown on the underside without stirring, on low heat for about 20 minutes.

5Fold in half like an omelet with a broad spatula.

6Brown one side, then the other.

7Cut into wedges like a pie and serve.
