- 4 halibut fillets about 1/4 lb each
- 1 tablespoon olive oil
- 2 ounces breadcrumbs
- 1 tablespoon dill chopped
- 1 tablespoon chopped parsley
- 1 tablespoon basil chopped
- 1 tablespoon lemon zest
- green beans
- roasted tomatoes
Directions

1Preheat oven to 400°F. Line a baking sheet with parchment paper. Toss the fish with the olive oil and season to taste.

2For the topping, combine breadcrumbs, dill, parsley, basil, and lemon zest and a small bowl. Season to taste.

3Heat a frying pan on high. Cook fish, skin-side down, 3-4 mins, until golden. Transfer to the baking sheet, skin-side down. Press crumb mixture firmly onto fish. Bake 8-10 mins until topping is golden and fish is just cooked through. Serve with roasted tomatoes and green beans.
