Ingredients
- 5 lb. roast (preferably rump roast)
- 2 Tbsp. plus 1/2 tsp. lemon juice
- 1/2 clove garlic, minced
- 1 Tbsp. plus 1 1/2 tsp. salt
- 2 1/2 tsp. crushed oregano
- 1 qt. plus 1 c. water
- 1 whole bay leaf
- 2 1/2 tsp. Italian red pepper, crushed
Directions

1Combine all ingredients except meat.

2Bring to a boil.

3Pour over meat in a roaster.

4Bake 2 1/2 hours at 350° (internal meat temperature 155°).

5Cool completely; save liquid.

6Slice meat paper thin.

7Put slices back in the juice and refrigerate overnight.

8Heat and serve.

9Be sure to save all the liquid and use on sandwiches.
