Ingredients

  • 5 lb. roast (preferably rump roast)
  • 2 Tbsp. plus 1/2 tsp. lemon juice
  • 1/2 clove garlic, minced
  • 1 Tbsp. plus 1 1/2 tsp. salt
  • 2 1/2 tsp. crushed oregano
  • 1 qt. plus 1 c. water
  • 1 whole bay leaf
  • 2 1/2 tsp. Italian red pepper, crushed

Directions

    Combine all ingredients except meat.

    Bring to a boil.

    Pour over meat in a roaster.

    Bake 2 1/2 hours at 350° (internal meat temperature 155°).

    Cool completely; save liquid.

    Slice meat paper thin.

    Put slices back in the juice and refrigerate overnight.

    Heat and serve.

    Be sure to save all the liquid and use on sandwiches.
