- 4 chicken breasts, skinned and boned
- 2 Tbsp. margarine
- 1 Tbsp. oil
- 2 Tbsp. lemon juice
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 c. half and half
- 4 lemon slices (seeded)
- 1 Tbsp. minced fresh parsley
Directions

1In a skillet, saute chicken in margarine and oil.

2When brown, remove chicken and discard margarine and oil.

3Add sherry, lemon juice, salt and pepper.

4Simmer 2 minutes, stirring constantly. Remove from heat and slowly add half and half.

5Heat until sauce begins to bubble.

6Add chicken and simmer 20 minutes until tender. Transfer to a serving dish and pour over top.

7Garnish with lemon slices and parsley.
