Lemon Pepper Shrimp

Ingredients

  • 1 lb. large peeled deveined shrimp, tails removed
  • salt
  • 2 tsp pepper
  • 1/4 c lemon juice
  • 1/4 c hot pepper jelly
  • 1 T butter

Directions

    Heat large saute pan over med high heat.

    Blot shrimp to make sure they are dry.
  3. 3
    Season with salt to taste.

    Sprinkle 1 side of shrimp with 1 t. pepper, press in.
  5. 5
    Repeat on other side.

    Add 1 T. olive oil to pan, add shrimp, cook 2 min on each side.

    Transfer to plate.

    Turn off heat, while pan is still hot add lemon juice and jelly and butter.

    stir until well mixed, put shrimp back in pan and coat i sauce.
