- 1 iceberg lettuce
- 1 avocado, diced
- 2 spring onions, finely sliced
- 2 tablespoons olive oil
- 2 small courgettes, diced
- 1 finely chopped red chili pepper
- 200 g cooked brown shrimp
- 1 lime, juice and zest of, plus
- 1 extra lime, cut into wedges to serve
- 2 -3 dashes Tabasco sauce
- finely chopped chives

2Put the avocado and spring onions in a bowl.

5Heat the oil in a pan over a low heat then stir in the courgette and chilli.

6Cook for 1 minute, then stir in the shrimps, lime zest and juice, Tabasco and 2 tbsp water.

7Heat through for a minute, then spoon into the bowl with the chopped vegetables.
