Ingredients

  • 1 T vegetable oil
  • 1 small onion, chopped
  • 1/2 t salt
  • 1 clove garlic, minced
  • 1 chile Serrano minced
  • 1 T fresh ginger, minced
  • 1.5 lbs. diced mango
  • 2 T + 2 t each cider vinegar, raisins, and brown sugar

    In a 2 qt saucepan, saute onion with 1/4 t salt till soft, add ginger, garlic and chile and saute for another minute. Meanwhile, mix the other ingredients in a bowl with the rest of the salt, and add to the pot. Simmer covered for about 1/2 hr until mango is soft. Cool uncovered.
