  • 3 c. cornmeal mix
  • 1 Tbsp. sugar
  • 2 1/2 c. milk
  • 3 eggs
  • 1 onion, chopped fine
  • 1/2 c. oil
  • 2 1/2 c. grated Cheddar cheese
  • 1 small jar pimento
  • 1/2 c. jalapeno pepper (or any hot pepper)
  • 1 c. creamed corn
  • 1/2 lb. cooked meat (bacon, browned and crumbled, ground beef or sausage, cooked and drained)

Directions

    Preheat oven to 400°.

    Mix all ingredients.

    Place in a large pan, greased and sprinkled with meal.

    Bake at 400° for 35 to 40 minutes.
